Abstract

A multiplicidade do espaço da cozinha responde a uma procura progressiva do lugar, do tipo e da escala de serviço, bem como de necessidades programáticas. As distintas disposições espaciais do espaço de confecção de alimentos variam consoante a época, a cultura, os ideais e as influências de teóricos e de arquitectos, que devem ser consideradas durante a realização de projecto prático. Neste sentido, no presente estudo entende-se sobre a evolução e a importância do espaço da cozinha ao longo da história, as funções a que responde, as circulações e as relações espaciais necessárias entre as várias zonas de serviço, para um correcto e bom funcionamento de uma cozinha doméstica e colectiva. Assim como, o mesmo trabalho, pretende servir de contributo de trabalho e de auxílio ao desenvolvimento da proposta de um espaço culinário que serve o colectivo, na vertente prática de Projecto Final de Arquitectura. Através da evolução do espaço de confecção de alimentos, conseguida pela leitura de vários autores, é percorrido um período temporal, iniciado com, a descoberta do fogo, a criação de uma estrutura capaz de o proteger e preservar, o período romano, o medieval, a época renascentista, até ao século XX e XXI, e com a interpretação de 1 estudo e 2 casos de projectos de cozinhas colectivas, considera-se que a cozinha tornou-se o lugar principal da casa, sendo nesse espaço intemporal, que se desenvolve a acção essencial à vida – a realização da comida, e onde se estabelece, no momento da refeição o contacto, a partilha e a socialização com o outro.

The multiplicity of the kitchen space is the answer to the increasing search for a place, a type and a work schedule as well as programmatic needs. The distinctive space dispositions of the food cooking place change according to the time period, the culture, the ideals and the influences of scholars and architects and should be considered during the construction of the practical project. This way, this study focuses on the evolution and the importance of the kitchen place throughout history, the function it responds to, the space circulations and relations necessary among the several service areas for a correct and good functioning of a domestic and collective kitchen. This study also means to serve as a working and auxiliary contribute to the development of the proposal of a cooking space which will serve the collective, in the practical side of the Final Project of Architecture. Through the evolution of the food cooking place - after the reading of several authors, a time line is covered, starting with the discovery of fire, the creation of a structure capable of protecting and preserving it, the Roman period, the Medieval period, the Renaissance until the 20th and 21st centuries - and also with the interpretation of 1 study case and 2 projects of collective kitchens, we can say that the kitchen has become the main place in the house, being in this timeless place that the essential life action develops – the food cooking - and where, during the meal time, the contact, the sharing and the socialization with the other takes place.
