Abstract: | This master project has the objective to develop a Business Plan which will enable the launch
of a food truck that will serve poutine in the French Alps.
The restaurant industry in the Savoie Mont Blanc area is highly responsible of the satisfaction
people feel when going skiing. However, based on a ground study, we quickly realised that all
restaurants look alike and propose the same local specialties. There clearly is a lack of restaurant
diversity in the area. After analysing the current market with macro data and comparing them
with field data I acquired with a questionnaire and a field trip, I decided to launch the first
Poutine food truck in France. Poutine is the perfect meal while out skiing since it is quick and
easy to eat while being warm and highly energetic. Associated with the mobility of a food truck,
TABERSNACK will be able to travel all around the region and fulfil the need for variety felt
by many skiers. We show in this business plan that food trucks are low capital requirement
business that become quickly profitable. According to our forecasts, TABERSNACK should
break even after 76 days of operation. It should reach a turnover of 86 811,21€ and a profit of
1 366,78€ the first year. Este projecto de mestrado tem como objectivo o desenvolvimento de um Plano de Negócios que irá permitir o lançamento de um ‘food truck’ que servirá poutine nos Alpes franceses. A indústria da restauração na região de Savoie Mont Blanc é um importante factor para a satisfação dos praticantes de ski naquela zona. Contudo, e com base num estudo no local, rapidamente nos apercebemos das semelhanças entre os restaurantes em termos de imagem e do próprio seriço, promovendo os mesmos tipos de especialidades locais. Isto representa uma clara falta de diversidade de restaurantes naquela área. Após analisar o mercado com macrodata e comparando esses dados com os adquiridos através de questionários e de um estudo de campo, decidimos lançar o primeiro 'food truck' de poutine em França. Poutine é a refeição perfeita numa viagem de ski: confeciona-se rapidamente e é fácil de comer, além de ser uma refeição quente e com alto teor energético. Graças à mobilidade de uma 'food truck', TABERSNACK vai estar disponível em toda a região e surprir a necessidade por variedade sentida por muitos praticantes de ski. Mostramos neste business plan que food trucks são negócios que requerem baixo capital e que rapidamente se tornam rentáveis. De acordo com as nossas previsões, TABERSNACK deverá atingir o breakeven point após 76 dias de operação, com um turnover de 86 811,21€ e receitas de 1 366,78€ no primeiro ano. |
